Type: still white wine. After soft pressing operations, the fermentation takes place in controlled temperatures steel tanks. It is refined with an at least six-months permanence in bottles.
Grape variety: blend of Greco and Montonico grapes, the grape-vines have a strong and deep bond with the land.
Soil: is characterized by a calcareous tufaceous component able to confer to the wine a decisive but balanced sign, supported by a fair acid tone.
Harvest: completely hand-made and using wooden case.
Properties: yellow color, with straw yellow glares. Wine swirling, along the walls of the glass, draws thick and thin “glicerose” columns; in the scent, where an exotic aroma burst, is impressed the Mediterranean origin of this wine: the maturity of the fruit and the minerality of the soil; the taste, rich and round, reveals the texture of yellow flesh peaches and of real apricots with a sense of drying.
Pairing: can be considered as a full-meal wine: from an ouverture to caviar, to gastronomic panettone, to wild smoked salmon, to Zibello Culatello, to the San Daniele ham. To continue with fish but also meat first course (a good compromise between whim and pure delicacy). It is ideal also with boiled pork shoulder, tuna tartare, sword fish…
